Collection: Darjeeling
Darjeeling a specialized tea from India which is considered a "Black Tea" but is less oxidized than a black tea. It can also be in the Green, White and Oolong tea family. It is called the "Wine" of Teas.
Darjeeling can taste sweet, floral, muscatel, nutty, with a little spice and lightly astringent.
Darjeeling teas comes in flush stages.
Flush I (1st Flush): Leaves from the first batch of the tender leaves.
Flush II(2nd Flush): Late spring to summer is the time to get the second flush. This comes with more complex flavors in the leaf becoming full bodied.
Is one flush better than the other?
The first Flush is lighter and more delicate in flavors with more nutrients, antioxidants and caffeine.
The Second Flush is more complex, and full bodied in flavors. Less astringent.
Brew Temp/Time
1 cup of water with 1/2-1 teaspoon of Darjeeling loose tea leaf.
* Place 1/2 tsp tea leaves into vessel and close lid. Pour warm/hot water over the vessel. Steep for time specified by type of flush. You may want to discard the first steep and drink the second steep.
First Flush (1 teaspoon of loose tea leaf)
175F- 180F 3-5 minutes
Second Flush (1/2 teaspoon of loose tea leaf)
190F- 200F 3-5 minutes
Premium (1/2 teaspoon of loose tea leaf)
190F - 200F Steep Steep 3 minutes
